It's been decades since I'd visited Edinburgh. Decades. Many. While based in London, I attended the Edinburgh Festival one late August. But I hadn't really seen much of Scotland. Consider this trip a check on the ol' bucket list. Cheese Connoisseur Magazine gave me an assignment, so I had a mission that landed me at the door of cheesemonger and affineur, I. J. Mellis. After our interview and tour of his cheese aging facilities, I visited his first store on the winding, colorful Victoria Street where I sampled more than a dozen Scottish artisan cheeses.
